Introduction
Want tomato soup to go with your grilled cheese, but you don't have anything in the pantry but stewed tomatoes? You're in luck! This is better than the canned soup concentrated stuff, and super easy to make! It also has less sodium if you use reduced-sodium tomatoes. Ingredients
-
1 can Petite Diced tomatoes (or any kind of canned tomatoes--just cut them up if the pieces are too big to eat whole)
1/4 cup milk (I use whole for the richness, but whatever you have is fine)
1-2 Tbsp. flour, for thickening
1/8 tsp. garlic powder
salt & pepper to taste
Directions
Pour can of tomatoes, juice and all, into a small saucepan. Stir flour into milk until there are no lumps left. Add flour according to how thick you want your soup--more flour will mean a thicker base. Pour milk mixture into the saucepan with the tomatoes and add the seasonings. Cook, stirring, over medium heat until hot but not boiling.
Makes about 2 1-cup servings.
