Ingredients

    1 lemon
    1/4 lb. unsalted butter, softened
    1 cup of sugar
    2 eggs
    1-1/4 cups flour
    1 tsp salt
    1 tsp baking powder
    1/2 cup milk
    1 cup chopped walnuts

Directions

Preheat oven to 350 degress. Using the wrapper from the butter, grease a loaf pan. Grate the zest of the lemon and divide it in two. Squeeze the juice of the lemon and reserve. Mix, flour, salt, and baking soda. In a food processor: 1. Cream the butter and sugar. 2. Add two eggs; process briefly. 3. Add about 1/3 of the flour mixture and some of the milk and process till smooth; repeat until all the flour and milk is used. 4. Add half of the grated lemon zest; process till smooth. 5. Add the walnuts, process in a few bursts, mainly to distribute the chucks. 6. Pour into buttered loaf pan. Bake for 65-75 minutes, until knife inserted in the center of the loaf comes out clean. Meanwhile: Cook the lemon juice, the remaining half of the grated zest, with another cup of sugar until it's syrupy. Remove the loaf from the oven; puncture all over with a long-tined fork, and ladle the lemon syrup over and into the loaf. Let cool, Enjoy!
