Ingredients

    6 c rhubarb, diced
    2 c strawberries, sliced
    3/4 c granulated sugar
    4 tbsp cornstarch

Directions

This makes about 18servings of about 1/3 c each.

Dice the rhubarb
Slice strawberries

Combine rhubarb and strawberries in a saucepan, with a tiny amount of water (about 3/4 c). Bring to a boil, simmer with lid on, stirring frequently.

After about 10 minutes of simmering, add in the granulated sugar and simmer for 5 more minutes.

Mix the cornstarch with a bit of water and stir into the boiling rhubarb. Allow this mixture to simmer for about 5 more minutes.

Good hot or cold. Serve it over ice cream or over the Passover Lemon Sponge Cake... it is delicious!
