A mix between a granola bar and muffin A mix between a granola bar and muffin
Number of Servings: 20

Ingredients

    2c. whole wheat flour -
    1c. packed brown sugar (natural no molasses added
    2c. oats
    1t. vanilla
    1/2c. applesauce (or smart balance butter substitute)
    2-3t. baking powder (less is fine, they will be more dense)
    1/2-3/4c dried fruits and/or nuts (pack what you want into them.. its a durable recipe!)
    1/4C. fat free sour cream (or 1 egg white)
    1/2-3/4c fresh fruit (applesauce, berries..whatever!)
    Coconut if you want
    chocolate chips for a snack (sugar free or fat free whatever you can find.)

Directions

Cream sour cream, applesauce, and sugar. Add flour, baking powder, and then all the rest! Press into greased (olive oil spray.. or other!)13x9 pan, or plop onto a cookie sheet for cookies! :) Add some milk or water to make it thinner for muffins. Top with oats if you like, and add granola if you like. I sometimes like to add Special K for an extra crunch!
