    1 red bell pepper, chopped
    1 small onion
    6 small mushrooms, chopped
    3 cloves garlic, minced

¼ teaspoon black pepper (or to taste)
    1 ripe tomato, chopped
3 ounces shredded lowfat mozzarella cheese

    Very Good
Very good. We used Rotel instead of crushed tomatoes, used an 8oz pkg of fresh mushrooms, and omitted all the oil. The veggies have enough water content to saute meat and veggies without oil. - 2/23/09
