Introduction

This is a traditional family recipe for apple pancakes that we "cleaned up" to be a little healthier. These have a custard-like texture unlike your traditional fluffy pancakes.
You can cook these in a smaller pan for a thicker pancake (with a longer cooking time) - but it is important for the batter to fill the whole base of the pan.

Number of Servings: 2

Ingredients


    2 eggs
    1/2 cup non-fat milk
    1/3 cup whole wheat or whole grain flour
    pinch of salt
    1/2 of Granny Smith Apple chopped

Directions

Makes 1 - 12" pancake. Serving size is 1/2.

Mix all ingredients together. Pour into a non-stick 12" cooking pan. You may want to spray pan with cooking spray . Cook over very low heat until the pancake sets (5-6 mins). Flip and cook until cooked through (3-4 mins)

You can serve these with traditional syrup or sprinkle sugar over them. I just make them with honey and wheat germ on top.
