Introduction

Ingredients

whole wheat flour, wheat bran, raw sugar, almonds, walnuts, applesauce, wheat germ, flax seeds, almond extract
Directions
• Preheat the oven at 375º. Grease or line a muffin tin with paper liners.
• In a large bowl, mix together dry ingredients (except nuts) and set aside. (These were too sweet for me; I plan on cutting the sugar to 1/2 cup.)
• Mix wet ingredients and extras (nuts, dried cherries, etc.). Add a teaspoon of almond extract.
• Pour the liquid ingredients into the flour mixture and mix just until moistened. Do not overmix.
• Spoon the batter into greased muffin tins. Bake for about 20 minutes or until a toothpick inserted in the center comes out clean.
• Move the muffin tin to a cooling rack and let it cool for just 5 minutes. Then remove muffins from the pan and cool completely on a wire rack.
Serving size: 1 muffin, I suppose :)
