    Medium Shell Noodles, 2 oz dry
    TurkeySausage, 4 oz
    Garlic, 2 cloves
    Spinach, fresh, 4 cups
    Red Ripe Tomatoes, .5 cup cherry tomatoes, halved
    Grated/Shredded Pecorino Romano Cheese, 0.25 cup
    Salt, 1 dash
    Pepper, black, 1 tsp
    Extra Virgin Olive Oil, 2 tsp


Cook pasta according to directions and reserve 2 tbsp cooking liquid before draining.

Meanwhile, cook sausage in large nonstick skillet over med-high heat, breaking it into small pieces with wooden spoon, until cooked through, 2 to 4 mins. Stir in garlic, spinach and tomatoes. Cook stirring often until the greens wilt and tomatoes begin to break down, 1 to 2 mins. Remove from heat and cover to keep warm.

Combine cheese, pepper and salt in a large bowl. Whisk the cooking liquid and oil into the cheese mixture, add the pasta and toss to combine. Serve the pasta topped with the sausage-spinach mixture.

    Very yummy! I used Barilla Plus Farfalle instead of the shells, and added 2 oz of neufchatel cheese instead of the picorino. I will definitely serve this again! - 5/23/11
