Introduction

Number of Servings: 16

Ingredients

    Egg, fresh, 2 large
    Flour, white, .5 cup
    Whole Wheat Flour, 1.5 cup
    Granulated Sugar, 2 tbsp
    Extra Light Olive Oil, 4 tbsp
    Baking Powder, 6 tsp
    Milk, nonfat, 1.75 cup
    Salt, 1 tsp
    Flax Seed Meal (ground flax), 1 tbsp

Directions

Beat eggs with whisk until frothy, add milk and oil and stir. Add all other ingredients and whisk just until smooth.

Lightly oil or spray griddle if necessary. Use 1/3 cup batter for each large pancake (nutritional info is based on this size; yield should be 16 pancakes). Cook pancakes until puffed and dry around the edges; turn and cook other side until golden brown.

For smaller pancakes, adjust nutritional info accordingly.

For blueberry pancakes, add 1/2 cup fresh or frozen (thawed and drained) blueberries.

    I was excited to quickly find a wheat recipe with flax seed. We tried it this morning and got mixed reviews from the family. My husband, son, and I thought they were great. My daughter was not so impressed. I will be trying these again. - 9/13/08
