Pie crust:
1 1/2 cups (6 full sheets) low-fat honey graham cracker crumbs
2 Tbsp non-fat plain Greek yogurt (Chobani)
2 Tbsp brown sugar
Pie filling:
1 pkg Jell-O cook & serve sugar-free fat-free reduced calorie vanilla pudding - made with 1.5 cups fat-free, skim milk
8 Tbsp powdered peanut butter (Bell Plantation's PB-2) - add at the end when pudding is starting to thicken and off the heat
**for chocolate peanut butter pie, add add 2 tsp unsweetened cocoa powder to the crust and add 4 packets Swiss Miss 25-calorie diet hot cocoa mix to the filling - 252.4 calories, 2.7 grams fat, and 13.3 grams protein for 1/4 pie
Directions
Pie crust:
1. Preheat oven to 350 degrees F (175 C)
2. Crush 6 graham crackers to make 1 1/2 cups
3. In a medium bowl, mix together graham crumbs, yogurt, and brown sugar (and cocoa powder, if making chocolate crust)
4. Press mixture firmly into a 9-inch pie pan
5. Bake in preheated oven for 5 minutes
Pie filling:
1. In a medium bowl, combine pudding mix, milk, and powdered peanut butter (and hot cocoa mix, if making chocolate p-nut butter filling)
2. Whisk two minutes
3. Pour into prepared and cooled pie crust
4. Refrigerate until sets up
