Ingredients

2 tsp olive oil
2 cup fresh spinach leaves
2 cloves garlic, minced
2 eggs
4 egg whites (or 3/4 C egg whites)
1 oz (approx 1/4 C) crumbled goat cheese
Directions
In a large bowl, beat the eggs and whip together with the egg whites. Add salt and pepper if desired.
In a frittata pan (or 6" - 8" skillet) wilt the spinach in the olive oil. Add the garlic and saute 2 minutes.
Add the egg mixture to the frittata pan/skillet. As the edges of the egg set, lift them with a spatula and allow the liquid egg mixture to run under the egdes. Do this until the egg mixture is almost all set.
Sprinkle on the goat cheese. If you are using a frittata pan, add the top and flip over so the second side will set. If you are using a skillet, top the skillet with a large plate. Invert the frittata onto the plate and then slide the frittata back into the skillet allowing the second side of the frittata to brown.
When frittata has browned place it on a serving plate and cut into quarters. Top with salsa if desired.
