Ingredients

    1/3 cup boiling water
    2 cups chopped rhubarb (fresh or frozen)
    1 1/4 cups sugar
    2 cups flour
    1 1/4 tsp baking soda
    1 tsp salt
    1 tsp ground cinnamon
    1 tsp ground nutmeg
    1 tsp groung cloves
    1/4 cup canola oil
    1/4 cup apple sauce (unsweetened)
    2 eggs
    1/4 cup egg substitute
    1 tsp vanilla
    Pour boiling water on rhubarb. Mix remaining ingredients. Stir in rhubarb mixture. Spray baking pan with non stick cooking spray,
    Bake in a 13x9x2 pan for 45 to 50 min. at 350 degrees.
    24 cupcakes may also be used - bake approx. 20 minutes.
