Ingredients

Chicken Breast, no skin, 12 ounces
*Coconut Milk, 0.6 cup
Onions, raw, 1 cup, chopped
*Canola Oil, 1 tbsp
Brown Sugar, 4 tsp packed
*Chick Peas, 1 cup
Tomatoes, diced or chopped, 2 cups
Spices (garam masala, curry spices, salt and pepper to taste)
Directions
Heat a pan with the oil. Chop up chicken breast and onion, saute over med-high heat until partially cooked. Add spices and let cook a few minutes longer. Add coconut milk and tomato, let simmer for 30 minutes.
