Introduction

Ingredients

    2 cups unbleached all-purpose flour
    1 cup white sugar
    1 tsp baking powder
    1/4 tsp salt

    3 eggs
    1 tsp vanilla extract
    1/2 tsp almond extract

    1 1/2 cups walnuts, toasted and chopped
    1 cup semi-sweet chocolate chips

Directions

Oven to 300 degrees F. Line a large baking sheet with parchment paper.


In small bowl, beat together eggs and extracts. Set aside.


In bowl of electric mixer, stir in flour, sugar, baking powder, and salt. Mix together about 30 seconds. Then add walnuts and chocolate chips. Mix again for about 30 seconds. Slowly beat in egg mixture. Beat until forms a dough around the blade of the mixer.


Take dough out of mixer and place on lightly floured counter. Shape into 14" long log, flattening out the top. Flour hands if the dough is sticking to them. Transfer dough log to prepared baking sheet. Bake in preheated oven for 35-40 minutes, or until log is firm to the touch.


Remove from oven and cool 10 minutes.


After cooling, slice log into 1/2" wide cookies with a serrated bread knife. There should be about 28 cookies when finished cutting.


Arrange cookies on their sides back on the baking sheet, and place in oven for 10 minutes. Flip cookies onto other side and bake another 10 minutes, or until the cookies are quite hard but not browned.


Remove from oven and cool on wire racks. These biscotti store very well in an airtight container for about a week. Enjoy!
