Ingredients

160g chicken breast
1 large onion
2 cloves garlic
160g red lentils
1/2 large red pepper
1 medium carrot
80g broccoli florets
400g tin chopped tomatoes
1 tsp ground ginger
1 tsp ground cumin
1 tsp ground coriander
1 tsp turmeric
1/4 - 1/2 tsp chilli powder, according to taste
1/2 pint water
Directions
Cube the chicken and slice all the vegetables.
Put the onions in a large saucepan with a little water and cook for 2-3 minutes until softened.
Add the garlic and chilli and cook gently for another 2 minutes, adding more water if necessary.
Add the rest of the spices, then add the lentils and 1/2 pint of water. Cook for 2-3 minutes until the lentils start to soften.
Add the chopped tomatoes and the rest of the vegetables and bring to a simmer.
Finally, add the chicken and cook for 20-30 minutes until the chicken is cooked and the lentils and vegetables are tender.
Serve with basmati rice or naan bread.
