Great hearty and filling recipe. Garnish can easily change each serving by choosing any of the following: Scallions, grilled peppers and onions, cilantro or crushed peppers. Number of Servings: 10

Ingredients

    4 cups vegetable stock
    7 cups cubed potatoes
    1 large onion (about 2 cups cubed)
    3 stalks celery
    3 Tbsp I can't Believe its not Butter Lite
    2 cups Silken Soy Milk Lite
    1/2 cup instant potato flakes
    Salt, pepper and nutmeg to taste

Directions

Makes 10 1-cup servings
Cube potatoes and cook until soft in vegetable stock
Saute chopped onion and celery in margarine until tender
Add soy milk to cooked onion and celery and heat till milk is warm while stirring.
Add potato flakes to soy veggie mixture and stir till absorbed
and thickened.
Add soy mixture to potato/broth mixture and mash slightly with a potato masher.
This makes a thick potato soup. Additional broth can be added if you prefer a lighter soup.
