Ingredients

3 Mediun zucchihi - sliced in half lenghtwise
1 whole egg
4 T parmesean cheese (reserve 1T)
1 Green Onion - chopped
3/4 C panko, or regular, bread crumbs
2 garlic cloves minced
salt and pepper to taste
Directions
Preheat oven to 375.
slice Zucchini in half lenghtwise and scoop out seeded middle, creating "a boat," place seeds into bowl. Add egg, garlic, 3T parmesean cheese, green onion and bread crumbs (i prefer panko found at Trader Joes) to bowl and mix gently
Lightly spray baking sheet with canola or grapeseed oil (i prefer grapeseed - found at Henry's or WildOats Marketplace)
Divide and place mixture evenly into boats and place on greased baking sheet, sprinkle boats with remaining cheese.
Bake for 15 minutes or until golden brown. You may also broil for an additional 1-2 minutes, after baking, for added browning.
Serve at room tempeture or hot.
