Ingredients

    3 med sweet potato peeled and cut into thin wedges
    1 small onion sliced
    2 tbsp oil
    salt and pepper or other seasoning you enjoy
    4 6oz skinless chicken breasts
    4 cups fresh spinach
    2 tbsp lemon juice

Directions

Combine sweet potato, onion, 1.5 tbsp oil and seasoning, mix and spread on cookie sheet, bake 25 minutes at 425F. While cooking pouns chicken breasts to uniform thickness and season. Heat .5 tbsp oil in non stick skillet and cook until brown and cooked through. In large bowl toss warm potato mixture, spinach and lemon juice. Serve immediately.
