Ingredients

Tomato Confit, 1/2 serving
1/2 tsp olive oil
2 oz goat cheese
4 oz puff pastry
1/2 c chopped onions
Directions
unfold 1 sheet puff pastry and roll it into a square. Cut two, 3.5" diameter circle from the pastry and save the rest for another use.
Preheat oven to 425 F.
Heat olive oil in skillet, add onions. Sautee until no moisture left, ~15-20 min. Add salt and pepper as desired, plus 2 tbsp wine, cook another 10 min until onions are browned.
Score a 1/4" border around each pastry circle. Prick the pastry inside with the tines of a fork. Place 1/2 the onion mixture on each, staying within the border. Crumble 1.5 oz of goat cheese on top of each, then top with the tomato confit. Top with the remaining 0.5 oz goat cheese.
Bake for 20-25 min until pastry is golden.
