Number of Servings: 4

Ingredients

    1 lb scrubbed yukon gold potatoes
    2 tbsp olive oil
    1 tbsp each dried oregano and thyme leaves
    1 tbsp steak seasoning (or use salt, pepper, paprika, dried onion, garlic powder, and cayenne to taste)

Directions

Heat oven to 400.
Spray cookie sheet with nonstick spray
Halve potatoes lengthwise and then slice into thin wedges
Place potatoes in bowl and toss with olive oil until coated.
Sprinkle with seasonings and toss again until well coated.
Arrange in single layer on cookie sheet. Bake 20 minutes, turning halfway through until browned and tender. (Note- the baking time will vary depending on how thinly you slice the potatoes.)
Makes 4 servings, just divide into 4ths while still on the cookie sheet.
