Ingredients

    1 Cup Potatoes (diced)
    1 Tbsp. Olive Oil
    1/2 Cup Egg Beaters Southwestern
    3 Whole Wheat Tortilla Shells (7-inch)
    3/4 Cup Low Fat Cheddar Cheese
    Taco Sauce ( if desired)
    3 Pork Sausage Patties, Crumbled and Browned

Directions

Brown Pork Sausage. Peel and cut potatoes into small cubes and and fry in the Olive Oil until done. Mix together sausage and potatoes. Pour egg beaters in to sprayed small skillet and cook until done, stirring constantly. And potatoes to eggs. Heat tortilla shells in microwave until warm. Fill shells with eggs and potatoes. Top with Low Fat Shredded Cheese and Taco Sauce.
