Ingredients

1 Large Onion Chopped
1 Large Sweet Potato Cubed
2 Cups Peas (Frozen is fine)
3 Tablespoons Canola Oil
4 Tbs Dry Roux
1/2 Package ground turkey (a little more than 1/2 Pound)
1 Cup Apple Sauce
3 Cups Water
6 Tablespoons Low Sodium Soy Sauce
1.5 Tablespoon Honey
Directions
This recipe makes Ten one cup servings of curry. Serve over brown rice. To make dry roux, you take your flour and cook over medium heat until it changes to the color you like - very light brown will work. Make sure you stir constantly. Set aside in another bowl and cool the dry roux - don't leave in the pot.
1 Heat your oil and then toss in your onions. Cook onions until translucent and then add your dry roux (made into a paste with the addition of some water) and mix well.
2 Toss in your turkey and cook until no longer pink.
3 Add your sweet potatoes and cook for a few minutes.
4 Add your water, soy sauce, honey and apple sauce and bring mixture to a boil. Cook for about 10 minutes and then add your peas and curry powder.
5 Bring the mixture to a boil and cook for another 5-10 minutes.
Serve over brown rice -long grain basmati if you have it.
