Introduction

this is my first attempt at making a "clean" chili (using ingredients that are all natural with no preservatives). this is my first attempt at making a "clean" chili (using ingredients that are all natural with no preservatives).

Ingredients

    2 C of Red Kidney Beans (Dry)
    1 C of Tostitos Medium Salsa
    1/2 Lb of Ground turkey 85/15
    1/4 C Fresh Sliced Mushrooms
    2 T Olive Oil, Extra Virgin
    2 T Dry Basil
    1 t Black Pepper
    2 t Chili Powder
    1 T Paprika
    1T Garlic Powder
    1/4 C Whole Wheat Macaroni Noodles


Directions

Sort bad beans out of bag.
Soak beans overnight in stock pot(following instructions on the bag)
Rinse, fill pot about 1 inch over beans with hot water
Cover and Simmer for about 40 minutes on MED HIGH- until the beans are almost desired tenderness.

While beans are simmering marinate the turkey: smash out ground turkey in a deep pan so that its a flat patty (I used a potato masher).
Sprinkle 1T Dry basil, 1/2T Paprika, 1/2T Garlic Powder, 1t Black Pepper, 1t Chili Powder onto meat. Drizzle the olive oil over all of it. Mix together (I used the potato masher again).

After beans have been simmering for 40 minutes add the rest of the SPICES to the pot and stir, leave uncovered to boil down some of the water. Start browning the turkey in the pan on HIGH. Add Mushrooms to the pan with the turkey. cook until mushrooms are just starting to get soggy- add salsa. Bring to boil and turn heat down to MED.

Once water in pot has boiled down to the beans, add entire meat mixture and stir. Continue cooking pot on MED. Add Macaroni, cover and simmer until macaroni is tender. Turn off heat and let stand for about 10 minutes covered.

Makes about 8- 1C servings.

PS. Totally open for suggestions- this was a trial run.

    Very good recipe. In Texas we call this "ChiliMac." I also add lots of garlic and a whole chopped onion. I love the addition of jarred salsa. Much easlier prep... - 1/29/10
