Introduction

I love to serve this with buffalo chicken over a big salad or with buffalo chicken joes. Feta is a nice alternative to bleu cheese. If you'd prefer bleu cheese you can sub it for the feta and use bleu cheese dressing instead of ranch. I love to serve this with buffalo chicken over a big salad or with buffalo chicken joes. Ingredients

    1 red bell pepper, diced small
    1 green bell pepper, diced small
    1 yellow bell pepper, diced small
    2 scallions, thinly sliced
    1 celery stalk, diced small
    1 med carrot, small diced
    1/2 C. reduced fat feta cheese crumbles
    1/4 C. ranch dressing ( I love O'Charley's ranch)
    salt & pepper (optional, not included in NI)

Directions

Dice vegetables to roughly the same size.

mix all ingredients together.

Refrigerate until ready to serve.

Makes approx 6 1/2C. servings
