    6-8 mangos, without refuse
    1 cup red peppers, chopped
    1/4 cup onion, chopped
    3 tbsp raw cilantro


Dice mangos, peppers, and onions (spanish/red/purple are best--if they are not available, I would use a small shallot--regular onion is far too strong); use whole cilantro leaves torn apart by hand.
Toss ingredients together and allow to stand in fridge for at least 2 hours and serve.
The mixture will create its own dressing and it does not require any additives at all. Wonderfully delicious on its own.

    I love Mango salad. I maranate jumbo shrimp and purple onions in asian ginger dressing. I cut the firm mango and onions julienne style. I serve on a bed of spinach leaves. Everyone goes wild for this salad. The color is so will take pictures as I do. - 2/24/09

    I double the onions, add about 1/2 a medium jicama, sliced in matchsticks, several chopped tomatoes, 2 tsps. minced garlic, 1/2 a chopped pickled jalapeno, 1/8 cup lime juice, and crushed red and black pepper...good as salad or salsa. You can also add avacado and cumin for a chunky guacamole. - 3/13/08
