Ingredients

    1/4 cup fat-free plain yogurt
    1/4 cup fat free mayo
    1 tsp. cumin
    1/2 tsp. taco seasoning
    1 tsp. lime juice
    1/2 cup black beans, rinsed
    1/2 cup canned corn
    1/2 cup diced purple onion
    1/2 cup diced red pepper
    1 med. tomato diced
    6 oz. grilled chicken breast

Directions

Combine all of the above ingredients together. Place a handful of mixed green and 1 serving of chicken mixture on a whole wheat tortilla. Also delicious served over a bed of mixed greens as a salad. Nutrional infomation does not include tortilla.

  • I increased the taco seasoning to 1t., and only used just a couple of shakes of minced onion. Everyone of whom I shared this with wanted the recipe. I am trying to think of how to introduce it to enchiladas. Super easy and yummy! - 3/13/13
