Introduction

Yummy Chicken salad made with skinless rottisere chicken breast and loads of veggies and fruit. The curry and the pineapple give it a nice exotic taste...sweet and mildly spicey....great with triscuits or with lettuce greens. Ingredients

    8 oz Rottisere Chicken breast (skinless) chopped or shredded
    1/2 cup green pepper (chopped)
    1/2 cup red pepper(chopped)
    1/2 cup onion (chopped)
    1/2 cup pineapple tidbits (drained)
    1/2 cup shredded carrots
    1/2 cup of raisins
    1/4 cup olive oli mayo
    1/4 cup miracle whip
    1 tsp no salt seasoning (your favorite)
    1 Tbsp brown spicy mustard (your favorite)
    1 Tbsp curry
    1/4 tsp black pepper


Directions

Chopped chicken breast into small bite size pieces (or shred it if you like) and place into medium bowl. Add peppers, onion, carrots and fruit. Then add mayo and miracle whip and mustard. Lastly, add the seasonings. Combine ingredients with a spoon until everything is mixed together. Eat right away or chill for a while.
* It's really good if you add 1/2 of chopped walnuts...but don't forget to account for the extra calories and fat (good fat)
makes 4 1-cup servings

    Very Good
    because hubby is allergic to peppers, i just used carrots, but it turned out great. i also used 1 tbsp of thai red curry paste and the curry powder, along with some old bay seasoning. very easy to make, and filling! thanks for the recipe! - 5/2/10
