Introduction

The original Rachel Ray recipe included simmering 2 ancho chiles (stemmed and seeded) in the broth for about 10 minutes - then putting in food processor. My family isn't much for heat - so I left this out and added crushed red pepper to mine.

NOTE: Coffee may make this a little bitter (esp with unsweetened cocoa). Next time I will use 1 Tablespoon instead of two.

Ingredients

    3 Cups Chicken Broth
    1 pound Ground Turkey (Lean)
    1 Tblsp Bacon Bits (for smokey flavoring)
    1 Large Yellow Onion - chopped
    4 cloves Garlic - finely chopped
    1 - 15-oz can Fire-Roasted Tomatoes
    1 - 15 oz can Dark Red Kidney Beans (drained and rinsed)
    1 - 15 oz can Northern Beans (drained and rinsed)
    1-2 Tablespoons Instant coffee
    1 TBSP Cumin (or sweek smoked paprika)
    1 TBSP unsweetened cocoa powder
    1/2 tsp ground cinnamon

Directions

This is quick and easy - takes about 30 minutes and feeds 6

Brown Turkey and add bacon bits (5 minutes +)
Add onion and garlic and cook until soft (about 5 minutes)
Stir in remaining ingredients and simmer for 10 minutes.

You can serve topped with Cheddar Cheese and red onion - but this is not in the nutritional values.

    I made this without the ancho chilis but stuck to the recipe for the rest and it was very tasty. different - but tasty. my husband added red hot. I used lean ground beef and beef broth instead of turkey - 1/17/13
