Introduction

Laksa paste is the richly flavorsome base used to make a Laksa soup. Laksa paste is the richly flavorsome base used to make a Laksa soup.

Ingredients

    6 x Red Chillies
    2 x Shallots
    5 x Candlenut
    2 x Stalks of Lemongrass
    2 x tbsp Peanut Oil
    1 1/2 tsp Tumeric
    1 x tbsp Shrimp Paste
    1 x Clove of Garlic

Directions

To make the paste, place the dried chilies in a heatproof bowl, Cover with boiling water and set aside for 20mins to soften.

Drain and chop the chillies coarsely. Place chilli, eschalot, candlenuts, galangal, lemon grass, oil, turmeric, shrimp paste and garlic into a food processor and process until finely chopped. (Note: for best result pound this into a pulp in your mortar and pestle)

This paste is not eaten, but is used in the Laksa Soup recipe.
