Ingredients

    3-pound boneless lamb roast
    2 garlic cloves
    2 tablespoons fresh rosemary leaves
    2 tablespoons fresh thyme
    1/2 cup Dijon mustard
    2 tablespoons light soy sauce
    1 teaspoon black pepper

Directions

In a food processor, combine garlic, rosemary, thyme, mustard, soy sauce, and pepper to make a paste. Completely cover lamb roast with paste. Cover and marinate in refrigerator for at least 1 hour (or overnight).

Preheat oven to 325 degrees F. Place roast, fat side up, in roasting pan. Roast for approximately 25-30 minutes, or until internal temperature reads 140 degrees (medium rare). Cover with foil and let stand for 15 minutes before carving.

    Lovely even with dried rosemary and thyme (1/4 amount) as well as a grainy mustard. I needed to cook the shoulder roast much longer than recommended. - 3/1/12

    I live on a sheep ranch. I'm going to marinate the roast overnight and cook it tomorrow - I'll keep you posted. - 5/2/10
