Slow Cooked Mexican Fajita Chicken Slow Cooked Mexican Fajita Chicken

Ingredients

    Put six boneless skinless chicken breasts into the bottom of your crockpot. Cut two limes into slices , squeezing the top and bottom portions of the lime into a measuring cup or mixing bowland then adding the slices the the crockpot. You then proceed to add to the measuring cup or mixing bowl (that you squeezed the lime juice into) the One cup of Italian Dressing, 12 oz. Bud Light (or any beer you would prefer, light for lower calories), you then add 3 tbls of chilli powder, 2tbls minced cilantro, 2tbls lemon pepper seasoning, 1tbls worchestshire sauce, 1tsp cayenne pepper, and 1 bay leaf. Mix this all together and set aside. Mince one Large onion and add to the chicken and lime slices in the crock pot. Then pour your marinade over the chicken in the crock pot.

Directions

Set the crock pot on your desired cooking temperature depending on how fast you want it to cook. I set it on low for four hours and then when I checked on it I shredded the chicken with my fork. Once chicken is finished cooking serve on flour, whole wheat, or any other type of tortilla desired. I liked serving mine over lettuce and tomato with Avocado Salsa as a salad. This probably serves 6-8 people.
