Introduction
A little twist from the ordinary meatlof, any kind of solid veggie can be used, substitute ham for bacon if you like, or stuff with pepperoni, mushrooms and mozza cheese, brush top with pizza sauce instead of BBQ sauce. Ingredients

Ground beef, lean, 24 oz
Mayonnaise, Hellman's Light, 8 tbsp
Onions, raw, .5 cup, chopped
Broccoli, fresh, 1 cup, chopped
Cheddar Cheese, 1 cup, diced
Minute Rice, 0.5 cup
Bacon, 6 medium slices, cooked
Directions
Preheat oven to 425.
Cook bacon, not crispy.
Mix ground beef with chopped onion, Hellman's, Minute Rice, divide in half.. Place one half of meat mixture in 9x9 pan, cover with chopped brocoli, followed by cheddar cheese and top with bacon. Take remaining meat mixture and cover top. Bake at 425 for 40 minutes, brush top with BBQ sauce if desired 15 minutes prior to meatloaf being cooked.
