Introduction

This is one of our favorite salads. It's very fresh and with the vinegar and just a little bit of olive oil, it doesn't feel heavy. This is one of our favorite salads. It's very fresh and with the vinegar and just a little bit of olive oil, it doesn't feel heavy.

Ingredients

    1 head of Romain (heart) chopped
    1 lg cucumber-diced
    1 plum tomatoes-diced
    1/2 onion-chopped
    2 T Kalamata Olives
    1/2 cup Feta-crumbled
    2 servings of Kangaroo pita chips
    1/2 T EVOO
    2 T Balsamic Vinegar


Directions

In a large bowl put in all the veggies, the cheese and the pita chips. Drizzle with the evoo and vinegar. Toss and eat!

We sometimes top the salad with chicken or serve it with a side of hummus. (both are not included in the nutrition values)
