Ingredients

    3/4 c oat bran
    3/4 c whole wheat flour
    2/3 c brown sugar
    1/8 t salt
    1 1/2 t cinnamon
    1 t baking powder
    1 t baking soda
    1/2 finely chopped skinned apple
    1 c mashed cooked sweet potato
    1 c raisins
    3 T canola oil
    2 large eggs
    2/3 c plain yogurt
    1/4 c chopped pecans
    1 T molasses

Directions

Preheat oven to 350
Combine bran, flour, sugar, cinnamon, baking powder, baking soda, salt, raisins, apples and nuts.
Add sweet potato, egg, oil and yogurt
Stir in all ingredients thoroughly.
Spray muffin tins with cooking spray
Spoon /4 c of batter per muffin
Bake 20 min or til toothpick comes out clean
Approximately 20 muffins 98 calories per muffin
