Number of Servings: 6

Ingredients

    1 full chicken breast, chopped into bite size pieces

    .5 tsp garlic powder
    .25 tsp Onion powder
    .25 tsp Lowery's Seasoning Salt
    ****seasoning is to taste. I like to add red pepper for a bit more spice****

    2 15oz can Kidney beans - drained
    2 15oz cans diced (or chopped) tomatoes - do NOT drain!

Directions

Open kidney beans and drain liquid. Rinse well.

Open tomatoes and dump into stock pot, add drained kidney beans. Add seasoning. Simmer on low-medium heat till boiling. Meanwhile, chop chicken into bite size pieces.

Add chicken to tomatoes and beans. Cover and let simmer for approx. 20 minutes, or until chicken is cooked through. While cooking you might want to check for flavor and seasoning. I find this depends on taste, some like it more onion, some like more garlic, some like more pepper.

When finished dish into bowl and enjoy! Makes approx 6 servings.

Can be topped with cheese or crushed corn chips
