Introduction
Easy and delicious recipe for "fried" rice. this was from weight watchers, the only difference is that I don't use the scallions. Great to add other veggies in to! Ingredients

1 cup jasmine rice (2 cups cooked)
1 lb chicken breast cubed into bite size pieces
2 cloves garlic, minced
.5 cup carrots chopped
.5 cup frozen peas
3 tbsps low sodium soy sauce
4 egg whites
Directions
Cook rice according to package directions. In the meantime, add egg whites to non-stick pan and scramble until done. remove from pan and set aside. add evoo and garlic over medium high heat and saute about 1 minute. Add chicken and carrots and cook until chicken is browned, about 6 minutes. When rice is done add to pan with peas and soy sauce and cook until heated through, about 1 minute. Makes 4 generous servings or about 6 1 cup servings.
