Introduction

Low fat, and using NSA canned items, also low sodium! Low fat, and using NSA canned items, also low sodium!
Number of Servings: 8

Ingredients

    2 cans of No Salt Added (NSA) black beans, drained
    1 can kernel corn, "fiesta" style, drained
    1 28-ounce can NSA tomatoes with green chiles, NOT drained
    1/2 tsp chili powder

    Optional: shredded cheese for topping

Directions

Combine all ingredients including the liquid from the tomato cans in a microwave-safe casserole dish. Heat until warm (exact time will depend on your microwave's power, but figure 2 minutes, stir thoroughly, and then 2 more minutes.

Tastes excellent served over brown rice and/or topped with shredded low-fat cheese. If you don't use cheese, then the recipe is vegan.

Serves 4 as main dish (served over rice), or 8 as side dish. Nutrition info is calculated for 8 servings, no cheese. Excellent for taking to potluck suppers, as even people who claim not to like vegetables will usually eat this.
