Introduction

Just over 7 years ago, I found a recipe for bruschetta online and surprised my husband, then my new boyfriend, with it for Valentine's day. We ate so much of this amazing bruschetta that we hardly had enough room for dessert.

We bring this recipe out for special events, family outings, and sometimes just for dinner for the two of us. So whether this is your full meal or simply an appetizer, buon appetito!

Ingredients

    1 baguette (approximately 10.5 oz) French bread
    olive oil spray
    14.5oz (1 can) diced tomatoes, no salt
    1 tbsp Italian seasoning
    2 tsp garlic, minced
    4 oz goat cheese, soft
    40 leaves fresh basil

Directions

Heat oven to 400. Cut baguette into approximately 40 1/4" slices. Spray olive oil on both sides of slices. Place in oven for 6 minutes to toast.

While slices are toasting, mix tomatoes with Italian seasoning and garlic.

When slices are toasted, smooth 1 tsp of goat cheese onto slices. Then spoon 1 tbsp of seasoned tomatoes onto each slice.

Toast for 6 more minutes. Now add a leaf of basil onto each slice. Serve while still warm.

One serving equals 2 slices of bruschetta.

    Very tasty! I didn't have any tomatoes, so I used tomato sauce (poor man's bruschetta we can call it) with basil and oregano for the spices. I'll make it again! - 7/27/11
