Introduction

This is the first time I ever was able to attempt an Indian spiced dish and LOVED it! We spoon it inside low carb wheat tortillas. Ingredients

    1 -20oz. package of extra lean ground turkey
    1 small can tomato saude
    1 cup light cream
    1 cup water
    1 medium onion
    1 TBSP minced garlic
    1 Red Bell Pepper
    1 1/2 cup frozen peas
    2 medium white potatoes
    1-2 tsps each of: ground coriander, turmeric, garam masala, lemongrass, dried cilantro, crushed red pepper
    1/2 tsp of curry powder
    1/2 tsp each of coconut extract and anise extract (you can use shredded coconut and fennel seed instead)
    salt to taste
    1 1/2 TBSP of Canola Oil
    5 sprays of canola oil spray as needed

Directions

1. Heat oil and spray in large saute pan
2. Place all spices except the salt, garlic and extracts in the oil and allow to cook 2 minutes.
3. Slice the onion, Chop the potatoes and cut red pepper into short strips
4. Add the garlic and onions to pan, saute for 5 minutes
5. Add the bell pepper, saute for 5 minutes
6. Add the potatoe, tomato sauce, water and extracts. Cover and simmer 10 minutes
7. Add the ground turkey, allow to cook
8. Add the frozen peas and salt
9. Add the cream and splenda
Spoon onto plate or in a tortilla
YUM!
It looks harder than it really was to cook! :)
