Introduction

Ingredients

    2 oz. Beef stew meat
    2 eggs poached
    1 sm carrot peeled & diced small
    1/8 cup onion diced small
    2 cloves garlic diced small
    3 sm mushrooms sliced
    1tbls oil
    salt & pepper

Directions

Dice all veggies excluding mushrooms into and 1/4 - 1/8in size.

In a deep skillet bring 3in of water and 2 tsp vinegar to a bare simmer.

Meanwhile season your beef cubes with salt and pepper and sear in a non stick pan. When all sides are seared move to plate to rest.

Add oil and all of the veggies, and cook until the carrots and garlic have a nice char but are not burnt.

Just before veggies finish cooking slice meat and add back just to heat through if you want the meat more done add earlier to cook with the veggies.

When water comes to a simmer drop in your two eggs. To make it easier crack them into a cup and add to water one at a time. Let cook for at least 3 min for runny centers.

Place veggie/beef mixture in a bowl, place your two eggs on top and enjoy.
