Introduction

Ingredients

    2 t. olive oil
    1 1/2 c. chopped onion
    1 red bell pepper, chopped
    8 cups peeled, cubed sweet potato or yam
    2 can red kidney beans
    1 1/2 c. vegetable broth
    1 t. peeled, grated fresh ginger
    1/2 t. salt
    1/2 t. ground cumin
    1/4 t. black pepper
    1- 14 oz. can diced tomatoes, drained
    1 - 4.5 oz. can chopped green chiles
    4 T. creamy peanut butter
    3 T. Chopped dry-roasted peanuts
    lime wedges

Directions

Heat oil in a soup pot over medium low heat. Add onion, red pepper and garlic; cover and cook 5 minutes. Add all other ingredients through green chiles, cover and cook on medium until vegetables are tender, 30-45 minutes. Spoon 1 cup cooking liquid into a small bowl. Add peanut butter, stir well with whisk. Stir peanut butter mixture into stew. Top with peanuts; serve with lime wedges. Makes 12 1-1/3 cup servings.

    YUM!!! You absolutely must try this recipe - so delish!!! I had a couple substitutions due to missing ingredients on hand: hot homemade chunky salsa substituted for chillies and tomatoes; ground ginger subbed for fresh; chicken broth subbed for veg broth; and celery subbed for red pepper. - 2/21/11
