Ingredients

    1 can (28 oz) crushed tomatoes
    2 pounds ground beef
    2 Tbs. honey
    2 large, fresh eggs
    2 Tbs. nonfat milk
    2 Tbs. parmesan cheese
    1 cup oatmeal
    1 cup dry breadcrumbs or stuffing mix
    1 Tbs. grape jelly
    2 Tbs. Cajun seasoning
    1 tsp. Chili powder
    1 serving sliced honey ham (6 slices)

Directions

Place ground beef into a large bowl, making a well in the center. Crack 2 eggs into a small bowl and transfer to the well in the center of the beef. Add oatmeal, bread crumbs, milk, 2 cups of the crushed tomatoes, parmesan cheese, and seasoning you enjoy ( I used Louisiana Style Cajun Seasoning in mine--2 Tbs., and 1 tsp. Chili powder) Mix all ingredients with a large spoon. To the remaining tomatoes, add the ketchup, honey, grape jelly, and salt and pepper to taste. Whisk these together til smooth, add 2 Tbs. to the meat mixture and reserve the rest.
Place half the meat mixture into a 9 x 13 inch baking dish and smooth out evenly in the pan. Cover this layer with the individual slices of deli ham (you can cut them into strips first if you like). Cover with the remaining meat mixture, and smooth out as with the first layer. Pour the tomato mixture on top and cover evenly.
Bake for 1 hour at 350 degrees Fahrenheit. Allow to cool, then cut into 24 pieces.
