Zahtar AKA za'atar, predominately ground sumac, roasted sesame seeds, and green herbs, Zahtar is used to flavor meats and vegetables, or mixed with olive oil and used as a marinade for olives or as a spread for pita or flatbread- a tangy, slightly sour Middle Eastern replacement for a PBJ! The taste of a za'atar mixture can be herbal, or nutty, or toasty.

Ingredients

    4 teaspoon Za'atar a Middle Eastern Spice
    4 teaspoon EVOO

Directions

Makes 8 servings of 1 teaspoon each of the spread.

Drizzle in oil into the Za'atar slowly until you reach the desired consistency for your needs (a little more oil for dipping, a little less for spreading).

Za’atar spread is great for dipping fresh breads or for spreading on pita and toasting until crispy.
