Introduction

I modified a recipe from deliciouswisdom.com, this would be a great substitute to dip into salsa instead of tortilla chips! I modified a recipe from deliciouswisdom.com, this would be a great substitute to dip into salsa instead of tortilla chips!
Number of Servings: 30

Ingredients

    ½ Cup Yellow Cornmeal
    ½ Tsp Sea Salt
    ½ Chipotle powder
    ½ Dried Cilantro
    ¾ Cup Boiling Water
    2 Tsp Olive Oil

Directions

Preheat oven to 450 degrees. In a medium bowl, combine cornmeal, sea salt, Chipotle powder and Cllantro. Stir in boiling water, a little at a time, until combined. Stir in olive oil and continue stirring for one minute until well combined. Immediately drop mixture in spoonfuls onto an oiled baking sheet. It should be watery enough to spread into chip shape. Bake for 10-12 minutes or until they begin to brown. Let cool before serving.
