I borrowed this recipe from RecipeZaar (#184155). It is suppose to taste like Ruby Tuesday's Chicken Chili. I am making it for the Superbowl so we will see! Ingredients

    6 Cups Cooked Diced Chicken Breasts
    6 Cups Low Sodium Chicken Broth
    1 lb. Great Northern Beans (soaked in water overnight)
    2 medium onions, chopped
    2 Jalapeno Peppers, seeded and dices.
    2 Chili Peppers, diced
    1 1/2 tsp. Oregano
    2 tsp Cumin, ground
    1/4 tsp cayenne pepper
    2 Garlic Cloves, minced
    1 Cup Salsa
    1 Tbsp. Olive Oil

Directions

Simmer beans, 1/2 the garlic and half the onions for 2 hours in the chicken broth. Make sure beans are soft.
Add Chicken and salsa.
Saute peppers, spices and remaining onions in olive oil. Add to Chili.
Simmer for an hour.
Serve with light sour cream or reduced fat cheese for added flavor!

    I substituted the dry white beans for 3 cans well drained and used a can of rotel instead of salsa and chilli peppers. I loved it and so did by family. - 2/2/08

    This is the most filling recipe I've tried so far. I had it for lunch and almost couldn't eat dinner. The taste is very comparable to what Ruby Tuesday serves. I was very pleased. - 2/4/08

    I always order this at Ruby Tues. I loved the short cut of rotel and canned white beans. This shortened the cooking time and the flavors were spot on! - 9/25/08

    Made this for supper tonight; very good and DH loved it! I cut the recipe down (there's only 2 of us) and toned down the heat a bit by just using canned green chilis and no jalapenos. I mashed some of the beans, to give it a thicker texture. - 10/29/12
