Slow Cooker Pork Chops with Apple-Cranberry Stuffing

Ingredients

1 package (6 ounces) herb stuffing mix
2 medium celery stalks, chopped (1 cup)
1 medium tart cooking apple, peeled and chopped (1 cup)
1 medium onion, chopped (1/2 cup)
1 cup dried cherries
1 cup FF chicken broth (from 32-ounce carton)
6 pork boneless loin chops, about 1/2 inch thick
Directions
1. Spray inside of 4- to 5-quart slow cooker with cooking spray.
2. Mix all ingredients except pork. Place half of the stuffing mixture in slow cooker; top with pork. Spoon remaining stuffing mixture over pork.
3. Cover and cook on low heat setting 6 to 8 hours or until pork is tender.

One of THE best crock pot recipes I've tried yet! Sweet meets savory and for not too many calories. Thanks so much! As a side note, I used a ~2lb roast instead of chops. Also, I left the skins on the apples - it was faster. - 10/21/08

Thank you; I'm glad you liked it. I'll have to try it with the roast. I'm making it again next week except I'm thinking about doing cranberries and peaches instead of the apples and cherries.

I'm confused - the recipe name says cranberry but the recipe calls for dried cherries? I wondered if that was a typo and should be dried cranberries? I know they taste pretty similar so I'm guessing they are interchangeable? I made this and it was ok; we're more of a plain stuffing type family. - 1/4/09

This recipe is phenomenal. I used cherries, (husband doesn't like cranberries), and since I was short on time cooked it on the HIGH setting for 3 hours. It still turned out perfect. I don't usually like pork, but this recipe is now a part of my weekly rotation and I can't wait to share it. - 4/14/11
