Ingredients

1 large sweet potato
Cooking spray
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon ground red pepper
1/8 teaspoon black pepper
Directions
-Preheat the oven to 500 degrees
-Peel and chop the sweet potato into strips or wedges.
-Add to a medium bowl with the potato wedges the next 5 ingredients (cooking spray, sugar, salt, ground red pepper, black pepper). Toss well to coat.
-Arrange potatoes on baking sheet in a single layer. Bake for 10 minutes, flip the potatoes and bake another 10 minutes, until tender and browned.
Makes 2 servings.

I make these numerous times a week, have been for LONG time! To make cooking time shorter and cutting easier, I nuke my sweet potatoes in the microwave for about 30 seconds or less (any more and they mush like baked potatoes) I also preheat the pan in the oven so they dont stick to the pan. ;) - 10/16/09
