I had this with avocado for lunch, and added cream and cheese and egg noodles into the mix for my daughter.
A filling hearty homemade broth. Light enough to eat through the day or add potatoes/ bread for a more filling lunch.

This is also GREAT (and much healthier) with grilled chicken. I prefer it with grilled chicken but today I used a chicken strip...so I figured I should put it in the recipe!
A favorite from my childhood. My mom's recipe for cottage pie tweaked with low-fat substitutions (except for the butter which I'd rather keep all-natural than use margarine with all its artificial ingredients and preservatives). Great if you don't have a whole lot of cash to spend on a big meal for the whole family.
