Was good but the sodium levels are to high
Canned refried beans aren't necessary. I used more beans, then whipped slightly with a stick blender before adding corn. Less fat, tastes just as good.
I use no fat when re-frying my beans, but I cook my beans from scratch. WHat thins this soup out?
I came up with a very similar recipe so I'd love to try this. problem is, I've never seen fat free refried beans (or I haven't looked hard enough) any particular brand(s)?
I really liked this. I used the Rotel tomatos with green chili which made it pleasantly spicy, but not too hot. I did not have sour cream and just left it out. I also used frozen corn. Its very filling and tasty. I also used ff, low sodium chicken broth.
Oh my goodness! I love this! Will be making this often. Can use spicy nonfat refried beans for more flavor and spice. Sooooo good!
Very quick and easy. From stove to table in about 10 minutes. Topped ours with crushed baked tortillas and about 2 TBSP fat free mexican blend cheese. Will be making this one again!
I found how to make "refried beans" without the "fat"
I drain & rinse the canned beans [red, pinto, black] then mash them in a food processor then add seasoning
garlic. onion, chili powder, & salsa
then add the low fat sour cream
this can be used in a tortilla for an enchilada
top cheese
