We made this over the weekend! It was great! The Fiber One is a little hard to chopin the FP but, ultimately and patiently, we got the job done! One modification was that instead or ony eggplant, we did an EP layer, some chicken and then more EP. IT was yummy and filling! ( and healthy too!)
